Regards the heating, I have the same issue in my car, if i shift at 7000, the water temp is fine, if I push out that extra 500, it creeps up.
Cant wait to get out to Hampton for a track day, all I've done so far is Pukekohe

Correct. The 1800 flywheel and clutch have a larger diameter, so more friction surface, better grip. Don't go messing around with taking weight out of the standard flywheel, spend the money on a proper chromoly one, that way you don't run the risk of it flying to pieces at 7,000rpm and really ruinin...

Unfortunately, Bendix don't make Ultimates in the 1600 shape, only 1800. However, they do make the Heavy Duty, which I am led to believe is good.
